For two people :
Spring Onions - 1 mammoth bunch
Egg Yolks - 2
4 teaspoons of lemon juice
A bit under 3oz of butter
4 teaspoons of hot water
salt and cayenne pepper
(and perhaps also with bacon, tomatoes and toast) Take one mammoth bunch of spring onions. Discard outermost part of onions and any particularly rough looking green parts. Quarter or halve the onions, according to size, and cut the green parts into two or three inches pieces. Simmer gently for 25 or so minutes until tender. Meanwhile make the hollandaise sauce. For two people you need: 2 egg yolks 4 teaspoons of lemon juice A bit under 3oz of butter 4 teaspoons of hot water salt and cayenne pepper In a small saucepan melt the butter. Meanwhile in a mixing bowl beat the eggs with a whisk and when smooth add all the ingredients, including the melted butter (just melted, not bubbling hot). Blend together and set the bowl in a larger pan of water (bain marie). Beat continuously and at the same time let the water beneath get hot but do not let it boil. After about 5 mins the sauce will become thick. Remove at once from the hot bain marie and set aside. (If not serving immediately keep warm in LUKEWARM bain marie.) Drain the spring onions --- and spoon the hollandaise over all, while still warm to lukewarm. Maybe add some grilled bacon and tomatoes -- prepared while the rest was cooking - and a few slices of toast, and bingo. Tasty supper. (Based on an original by Calamity Jayne)
