Deliciously peppery, watercress is a great addition to salads. It's high in calcium, iron and folate. Another example of a great winter crop really high in vitamin C. So high it actually surpasses oranges gram for gram. Perfect raw, in salad, or made into pesto. You can wilt it down and add to any recipe you'd use for spinach or other leafy greens. Cooked, it's flavour softens but still lends really well being chucked in a thai green curry or as its own hero in a winter Watercress soup.
