

An often overlooked and underrated vegetable. They are more than just a base to stocks and stews, they can also become beautiful side dishes just by themselves. We love them whole and slowly roasted with olive oil or butter, until the edges are caramelised and the centres are gooey. Top with Parmesan or a little Dukkah.
